Take for instance, this ‘Mooli Ka Laccha’ – a traditional recipe extremely popular in parts of both Uttar Pradesh and Bihar. It can be had as a snack or salad – it is also a popular street food in Bihar. The dish is often referred to as ‘Mooli ka kass’ and ‘Mooli Ki Kees’ in many parts of North India.

It is incredibly easy to make this salad at home, and it is popularly served with groundnuts. You only need a handful of ingredients to put this together; for instance, grated mooli (radish), salt or rock salt, green chilly, ginger, lemon rind and lemon juice.

Since the salad has a distinctly hot and pungent tone due to radish, green chillies, and ginger, it is balanced out with a citric flavour of lemon juice and earthiness of groundnuts.
