  • 3 stalks celery, sliced into 1/4-inch pieces
  • 3 cloves garlic, smashed and peeled
  • 1 large onion, diced
  • 4 cups cooked brown rice
  • 3 1/2 cups crushed tomatoes
  • 1 cup chicken broth
  • 1/3 cup chopped fresh parsley
  • 6 tablespoons nonfat plain Greek yogurt
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon salt

Heat oil in a pan over medium heat then cook carrots, celery and onion for 8 to 10 minutes or until softened.   • 3 tablespoons balsamic vinegar
  • 1 tablespoon Italian seasoning
