If you are looking for something easier and healthier to make at home for your family in quarantine, this rice phirni recipe shared by Bollywood celebrity Shilpa Shetty Kundra is just perfect. Shilpa Shetty usually dishes out healthier and nutritious, yet tasty recipes on her Instagram handle, and this sweet Eid delicacy of chawal phirni is no different. 

“It’s time to break your fast and celebrate this auspicious occasion with something sweet. Our recipe of the week – Rice Phirni – is made without any refined sugar, but is just as delicious. You can also prepare it using Almond Milk and make it lactose-free too! I’m sure your loved ones will absolutely love and devour this one. Eid Mubarak!” Shilpa Shetty wrote on her post.

Shilpa Shetty made the phirni with Basmati rice as it provides a great amount of carbohydrates and energy. The phirni recipe is very easy to follow. First, boil calcium and protein-rich milk in a large pan. Blend pre-soaked Basmati rice with some water till it turns into a coarse and grainy mixture. Pour the mixture into the boiling milk. Add few strands of saffron (kesar), cardamom (elaichi) powder, and let it all cook for some time. You’ll see your phirni developing a beautiful yellow hue. Add a dash of rose water and some chopped or sliced pistachios (pista). 

Shilpa Shetty used agave syrup to sweeten her phirni but you can also use honey or jaggery (gur) if you don’t have agave syrup at home. Pour the phirni in earthen pots, garnish with some more pista and rose petals and refrigerate it for at least one hour. Serve chilled.
